Recipe Notes
Lemon Cookies with White Chocolate
September 10, 2018

Many years ago Costco had a lemon cookie offered in the bakery goods that was the best lemon cookie I ever tasted. I have tried many recipes over the years, hoping to get a recipe close to that cookie. This one could be it. It is adapted from a Pistachio Almond cookie recipe. It is soft, chewy, and packed with lemon flavor. I think the white chocolate chips could be omitted. I will update when I try without the chips. If you try this recipe, please leave a comment with your opinion.
