- I named these cookies Vanilla 'Egg Yolk' Cookies because they use egg yolks only (no whites). The only reason they came about was because I had 2 egg yolks to use from my Cinnamon Sugar Candied Walnuts recipe. The outcome was a delightful soft cookie. The only thing I might do different the next time I make them is chop the pecans and sprinkle over the whole cookie so there are pecans in every bite.
- Be sure to toast the pecans ... it makes a big difference in the flavor of the nut.
