3 well-beaten eggs
18 ounces cream cheese
3/4 cup plus 1 tablespoon sugar
1 teaspoon vanilla
3/4 teaspoon salt
3/4 cup sour cream

- Preheat oven to 375 degrees. Beat together eggs and cream cheese. Add sugar, vanilla, salt, and sour cream. Pour mixture into a 9-inch springform pan with pre-baked graham cracker crust. Bake at 375 degrees for 45 minutes. Sprinkle with cinnamon.

Graham Cracker Crust
1 1/2 cups graham cracker crumbs
6 tablespoons melted butter
1/4 cup confectioners sugar
1 teaspoon cinnamon
- Mix together Graham Cracker crust ingredients and press into a 9-inch springform pan. Bake at 350 degees for 15 minutes.
